Beef Menudo-Authentic Mexican Menudo-Comforting stew-Mexican food

This Authentic Mexican soup (menudo de pancita) is rich and satisfying meal. Weekends are the perfect time to celebrate family reunion and time with family. Menudo is one of the favorite beef stew for breakfast or brunch in Mexico. It is the perfect cure for hangover along with a cold beer.


Menudo is made of tripe ( beef stomach, chopped in pieces), cooked with dried chilis,

garlic, onion, and hominy. I use slow cooker


because I prefer to cook overnight and have it ready early in the morning. Also I place the slow cooker pot outdoor due to the strong odor when cooking.


The beef feet are cooked first for 3 hours and then add the menudo beef pieces, onion, salt, garlic oregano and bay leaves.

After 4 hours cooking I start adding the rest of the ingredients- menudo mix, dried chili, more dried oregano, cumin and more salt if need it.


Cover everything and let it simmer for the rest of the night. Total slow cook 8 hours.



Ingredients:

3 lbs. beef honeycomb tripe, chopped into 2-inch pieces

4 cups of water

1/2 onion

1 whole garlic head

2 tablespoon menudo mix

2 tablespoon chili pepper powder

3 tablespoon dried Mexican oregano

1 tablespoon cumin

7 bay leaves

1 cup hominy

salt


Toppings:

* diced onion fine

* chopped fresh cilantro

* lime wedges

* dried Mexican oregano

* flour tortillas or corn tortillas


Instructions:

1-Cut the honeycomb tripe and feet and rinse well

2- Add water to slow cooker and add the feet beef only

3- Add the onion, garlic, bay leaves, salt and 1 spoon dried oregano

4- Cover and bring to a boil for 3 hours

5- After 3 hours add the honeycomb tripe (pancitas) and the rest of the ingredients

menudo mix, chili, more oregano, hominy and cumin

6 - Continue cooking all the ingredients for 4 more hours (overnight ) at slow heat

7- 30 minutes before serving check for taste and add more salt if need it.

8- Serve with corn or flour tortillas, topped up with fresh chopped cilantro, onions, jalapenos and lime juice.
