Beef Short Ribs with Sauce- Costillas de res con Salsa (English/Spanish recipe)

Short ribs is a traditional dish on the northwestern side of Mexico. We cook ribs with salsa, mole, chiles and soups. This recipe is made with several chile powders. I like to boil the ribs first to make them very tender and use the broth to cook a good soup.


I then place them over medium high heat and brown the sides giving a flavorful crust. Sauteed the red onions for several minutes and finally pour the smoky chiles sauce to evenly simmer until tender.



Ingredients:

2 pounds beef short ribs

1 roasted poblano

1 red onion

1/2 teaspoon achiote powder

1/2 teaspoon Cayenne powder

1/2 teaspoon cumin

1/2 teaspoon black pepper

1/2 teaspoon salt

3 tablespoon lime juice

1 tablespoon dry oregano

2 tablespoon olive oil

1 cup beef broth


Instructions:

In a large saucepan over medium high heat, boil the short ribs for 40 minutes.

In the meanwhile blend the ingredients in the blender or food processor for the sauce:

Add a roasted poblano chile, 1/2 red onion, achiote, cayenne, cumin, black pepper, salt, lime juice, oregano, olive oil and beef broth ( brom ribs cooking)


Then in a large skillet over medium high heat add 2 tablespoons olive oil and place the ribs to browned until you see a crust.

Add 1/2 of the chopped onion left to sauteed for few minutes, stirring frequently. Pour the chiles sauce and add the stock, stirring for few minutes. Cover the

skillet with a lid bring to a boil for 25-35 minutes or until the meat is falling off the bones.

Serve with mashed potatoes, rice and corn tortillas.



COSTILLAS DE RES EN SALSA - RECETA EN ESPANOL


Ingredientes:

2 libras de costillas de res

1 chile poblano rostizado en la lumbre o el comal

1 cebolla morada

1/2 cucharada polvo de Achiote

1/2 cucharada polvo de cayenne

1/2 cucharada de comino

1/2 cucharada de pimienta molida

1/2 cucharada de sal

3 cucharadas de jugo de limón

1 cucharada de orégano seco

2 cucharadas de aceite de oliva

2 taza de caldo de res (use el caldo cuando hirvió las costillas)


Instrucciones:


En una olla A FUEGO MEDIO ALTO, ponga a hervir las costillas de res por 40 minutos.


En la licuadora o procesadora de comida, ponga los ingredientes a moler.

El chile poblano, la 1/2 de la cebolla, los chiles de polvo, especies, jugo de limon, sal, aceite de oliva y el caldo de res.


Una vez que las costillas terminaron de hervir, las pone en un sartén grande a medio caliente de temperatura, le agrega 2 cucharadas de aceite de oliva para empezar a freír las costillas por varios minutos hasta que tomen un color dorado.


Agrega la otra mitad de la cebolla y deja que se dore con las costillas unos minutos. Después agregas la salsa preparada a la carne y otra taza de caldo de res. Lo deja tapado para que se cocine por unos 25-35 minutos.


Lo sirve acompañado con puré de papas, tortillas calientes y una bebida al gusto.
