Breakfast Potato and Chorizo Burrito!

Burrito filled with red potatoes, Mexican chorizo, refried beans and melted Mozzarella cheese! Easy to make burrito, Its flavorful and satisfying.

Potatoes and Chorizo is a popular Mexican taco filling; the hearty combination of potatoes, chorizo, beans and cheese its amazing! I decided to create the burrito instead of a taco, making a single tortilla wrapped with filling easy and fast to serve.

Ingredients:
1 red potato cut into 1/2 inch pieces
1/2 cup Mexican chorizo
1 tablespoon chopped onions
1 can pinto beans
1/2 cup mozzarella cheese
1 or more burrito flour tortilla
1/2 cup cooking oil
1 teaspoon salt
Instructions:
On a large nonstick skillet over medium high heat, pour cooking oil and add the red potatoes to be cooked. Cook the potatoes for 10-15 minutes, stir until tender and light brown.
In a small skillet cook the chorizo over medium high covered for about 10 minutes. Break the chorizo and stir. Add the chopped onions stirring until softened for 3 minutes.
Refry the pinto beans with 1 tablespoon cooking oil. Mash the beans and stir until liquid is gone!
Place the cooked potatoes back into the skillet adding the chorizo stir while cooking for 1-2 minutes and add the salt.
In a skillet or comal warm the burrito tortilla and place on a serving plate. Meanwhile add the mozzarella cheese to a skillet or comal to melt. Transfer the melted cheese onto the burrito tortilla adding the refried beans, potatoes mixture and hot sauce if desired.
Wrap the tortilla by folding one side and roll tightly into burrito. Garnish with melted cheese or hot salsa!
