Cactus (Nopalitos) with shrimp and achiote

This recipe will surprise you with the combination of shrimp, garlic and Achiote sauce. My mother cooked the nopales with chile ancho sauce and egg, they were delicious. My kids did not liked the nopales mix with eggs when I started cooking the recipe. I then substituted with shrimp since they like it so much. The recipe was so good that I will not change anything.

Ingredients:

2 cups of nopales (chopped, and already boiled)

2 spoons of cooking oil

5 minced garlics

1/3 of small onion chopped

4 spoon of achiote sauce

1/2 teaspoon black pepper

1/2 teaspoon cumin

1 teaspoon salt

10 medium size peeled ach chopped shrimp.

Instructions:

In a large skillet at medium high heat add 2 spoons cooking oil. Add the garlic, onions and let it simmer few minutes to get the garlic roasted. Add the nopales (cactus), salt, black pepper, cumin, achiote sauce and last the shrimp. Mix all the ingredients and let them cook for about 5 minutes stirring from time to time. If you want this recipe for vegetarian just do not add the shrimp.


Serve the nopales on a tostada, tacos, sopes, gorditas or just as side dish. Topped with cabbage, queso fresco and cilantro


Boil the cactus :

Boil the chopped cactus for 20 to 25 minutes with 1 spoon of salt and 5 garlic cloves. Then drain them before frying.
