Caramel New York Cheesecake!

This creamy New York style cheese cake is so creamy and delicious whether you serve it plain or with caramel topping.
There is no Holidays without a cheesecake for dessert on our table, its one of the most amazing desserts to make for your family. I also like to prepare this treat for summer or birthdays. New York Cheesecake recipe is easy and delicious, you can create different topping to enhance more flavor.
What makes this cheesecake so creamy?
* it all about the cream cheese by Kraft, for best results use room temperature cheese, eggs and sour cream before making the recipe.
* Needs to cook for about 2 hours on water bath
* To avoid cracking: Keep the cheesecake in the oven to cool off for 30 minutes with oven off.

Ingredients for crust:
1 1/2 cups graham cracker crumbs
1/2 cup sugar
1/2 cup melted butter
In a medium sized bowl combine the ingredients until you have a soft dough.
Press into the bottom of 9-inch form pan.
Pre-heat oven at 325 degree F and bake the crust for 15 minutes. Remove it from oven and set aside to cool off.
Ingredients for filling:
6 ( 8 Oz.) packages room temperature cream cheese
5 eggs room temperature
1 1/4 cups sugar
3 tablespoon flour
1 cup sour cream
1 1/2 teaspoon vanilla
1 lemon zest
1 teaspoon lemon juice
1- Use a mixing bowl blending and beat the cream cheese, blend until soft.

2- In a small container mix the sugar and flour. Add the mixture to the cheese mixture and continue blending a slow speed.
3- Add eggs, one at a time and blend well.
4- Add the sour cream, scraping sides of bowl as need it.
5- Add vanilla, lemon zest and juice continue blending making sure mixture is silky smooth and creamy.
6- Pour mixture into the baked crust.

7- Cover the bottom baking pan with foil paper.

8- Place the baking pan into water bath baking dish in the oven.

9- Set oven timer for 60 minutes so you can give the baking pan a turn and add more water to the dish if need it.
10- Lower temperature at 300 degree F. Continue baking another 45-60 minutes. Turn oven off and leave the cheesecake in there.
11- Wait about 30 minutes to cool off to remove it from oven. Place cheesecake into the fridge overnight, next day you can add toppings and serve.
Ingredients for toppings:
cream cheese glaze:
4 Oz cream cheese
4 tablespoon unsalted butter
1 cup of confectioned sugar
lemon zest
1 teaspoon vanilla
4 tablespoon milk
Mix all ingredients with hand mixer until smooth and creamy.
caramel sauce: it can be purchase at almost any Hispanic stores or you can create your own.
1 sweetened condensed milk - in a sauce pan place the condensed can to boil at medium heat for 2 hours making sure to keep adding water as need it, the can needs to be covered with water.
Remove it from boiling water and let it cool off. Open the can and the caramel sauce will be ready to spread as topping on cheesecake.
