Fish Taco with Mango salsa

Delicious fish meal for any occasion! This recipe is super easy to whip up and feeds a crowd, cooking under 40 minutes everyone will enjoy this meal.

Pan fried fish are extremely flavorful, tasty and light you may use tilapia or catfish for this recipe.



Ingredients:

1 pound of fish (tilapia or catfish nuggets)

1/2 tsp paprika

1/2 tsp black pepper

1/2 tsp salt

1/2 tsp cayenne pepper

1/2 cup or more cooking oil for frying


Mango salsa ingredients:

1 tsp lime juice

1/2 tsp salt

2 tsp olive oil

2 tsp vinagre

1/2 fresh diced mango

3 tsp diced jicama

1 diced roma tomato

3 tsp diced red onion

1 diced jalapeno

2 tsp chopped cilantro

Mix all salsa ingredients in a bowl


5-8 corn tortillas

1 egg mix with 1/2 cup of milk

flour


In a medium bowl place the fish nuggets and add the spices; paprika, salt, black pepper, and cayenne pepper to season the fish.

Dip the seasoned nuggets into egg and milk mixture coat and then dredged the fish on both side with flour.

In a skillet over medium high heat oil to cover half of the fish and deep fried until is crispy or golden.

Place the corn tortillas on a cast iron or skillet with oil to be fried both sides and fold them. Then add the fried fish nuggets, mango salsa to the fried tortillas and serve with wedges of lime on the side.
