Summer is the best time to grilled chicken. The chicken with beer inserted into the cavity holding the chicken as it cooks and tenderized the meat. This process the beer steam right through, making the meat very tender and juicy.

I like to place slices of lime inside the cavity and over the lime juice, paprika, dry oregano, black pepper, garlic powder, dry rosemary and salt.

Ingredients:

1 whole chicken

1 tablespoon salt

1/2 tablespoon black pepper

1/2 tablespoon garlic powder

1/2 tablespoon dry oregano

1/2 tablespoon dry rosemary

1 tablespoon paprika

1/3 lime juice

1 tablespoon chipotle powder

Instructions:

Wash the chicken and dry it with paper towel before applying the rub.

In small bowl add the paprika, black pepper, garlic powder, salt, rosemary, oregano, and chipotle and combine all the ingredients.

Sprinkle the spices all over the chicken, slice 1/2 lime and shove it face down in the top of the cavity of the chicken and then sit the chicken on top of the open beer can.

have the grill ready, if using charcoal move the charcoals to one side of the grill and leave space for low heat to cook the chicken.

Place over indirect heat and let it cook for about an hour or two.

Chicken can be served with Mexican rice, guacamole, Pico de Gallo, mashed potatoes

tortillas and many more options.

enjoy it.
