How to make Fiesta Gorditas with Chicharron?

Chicharron gorditas are authentic Mexican great dish to prepare for any festivity. Gorditas can be fill with beans, chicken, ground beef, cheese, chicharron and many more options. My favorite are chicharron with green salsa. I have created a festive color gorditas this time. Instead of using regular color masa I blended cilantro with water and mixed with masa to create the green gorditas. To create the red gorditas I added achiote powder chile and turned very soft and flavorful. I was amazed to watched my mother preparing the gorditas with her hands so easily, I just like to make mine easy by using the tool called "tortillera" is faster. I am sharing with you my version of preparing Fiesta gorditas de chicharron for Cinco de Mayo Celebration! Enjoy it.


For Chicharron recipe:

1 pound of chicharron (found meat market)

1/2 sp cummin

1/2 black pepper

1 sp salt

1 1/2 cup of green salsa

1/2 sliced onions


Green Salsa "Verde":

8 green tomatillos

1/2 onion

6 garlic clove

2 jalapenos

lime juice

salt

4 chile de arbol

1 handful of chopped cilantro

2 sp olive oil

In a cast iron or (griddle) roast the tomatillos, jalapenos, garlic, onion. In a blender add all the ingredients, lime juice, salt and olive oil.

In a big skillet at medium high heat place the chopped chicharron stirring until you see changing color, add onions and spices and mix the ingredients and keep stirring. Add the salsa verde (green salsa) to the chicharron and let it cook for 15 -20 minutes or until meat is tender.


Masa preparation:

2 cups Masa harina MASECA (dough)

11/2 cup liquid (water ) for simple white color gorditas

2 sp shortening

1 sp salt

1 sp baking powder

hand full of cilantro and water mix (for coloring) mixed in a blender

3 cp achiote powder mix (for coloring) mixed with masa

To create the masa dough, add the maseca in a large bowl, salt, baking powder, shortening and the mix coloring if you want the gorditas red or green.

Mix ingredients with your hands adding water until is soft dough forms.

To make the gorditas: you can do it with your hands or use a tool called "tortillera"

Heat the iron cast at high heat, place the tortilla to be cooked. Flip it 3 times until you see some puffing.

Let the gorditas cool before making the cut opening and add the chicharron cooked. You can topped the gorditas with sliced red cabbage, onion, fresh cilantro, queso fresco and crema mexicana optionals.
