Mexican Grilled Cheese Burger

This recipe is a mouth watering, juicy loaded with melted Oaxacan cheese, guacamole, red onions, fresh lettuce, tomatoes, jalapenos and bacon.


Summer is here and best time to cook out in a grill. I like to cook with charcoal, I think that the meat gets better flavor if it is grilled with charcoal.


I use ground beef chuck because has the most fat and produces a juicy burger. I add the grilled onions and jalapenos, fresh tomatoes, lettuces, bacon, slices of avocado and bacon!


Ingredients for burger patties:

2 pounds ground beef chuck

1/3 chopped yellow onion

2 diced garlic cloves

1 egg

1 tablespoon salt

1/2 tablespoon cumin

1/2 tablespoon black pepper

1 tablespoon white vinegar

3 tablespoon flour

3 tablespoon achiote sauce

1 tablespoon paprika


Assembling the burger

Oaxaca cheese

tomatoes slices

Red Onion slices

Lettuce

jalapenos (optional)

avocado or guacamole

Bacon strips (optional)

Baked buns

Mango sauce to spread the buns


Instructions:

In a large bowl mix: ground beef, vinegar, salt, Black pepper, cumin, egg, flour, chopped onion, minced garlic and achiote sauce.


Shape the meat into patties and get grill ready to cook the burgers. The best secret is that the grill must be hot to lock the juices. The grill grates needs to be clean and spray oil to avoid sticking. You want to cook the burger well done for healthier reasons.


Do not overcook or press down the burger because it pushes all the juices out.

Cook the burger 5-7 minutes each side for well done burger, place the Oaxaca cheese to melt on top for a minute or so.


Place the patties to rest for for 5 minutes before preparing the burger to dress up with toppings.


Mango sauce mayonnaise:

1/2 of chopped mango

1 spoon mayonnaise

5 spoons of tabasco sauce

1 spoon grey poupou

1 lime juice

Blend all the ingredients for a nice flavorful mayonnaise sauce.
