Mexican ground beef enchiladas

Enchiladas are made with corn tortillas, ground beef, cheese and vegetables. Today I am preparing ground beef enchiladas topped with gravy and cheese.

Recipe is easy to make, prepare the ground beef meat, cook the sauce separately and pre heat the tortillas to assemble the enchiladas.


Ingredients:

1 pound ground beef

1 pkg taco mix

1/2 black pepper

1/2 cumin

1/2 sp salt

3 cloves minced garlic


8 corn tortillas

2 sp cooking oil

shredded mexican cheese

cilantro leaves


Sauce-gravy:

1 can tomato sauce

1 sp paprika

1/2 sp cumin

1/2 black pepper

1/2 cup beef broth

1 sp chili powder

1/2 sp salt

cornstarch mix with 4 sp of water to thicken the sauce


Instructions:

In a medium skillet at medium high heat add the ground beef and stir until turning brown. Add garlic, salt, taco mix, black pepper and cumin. Cook for 10 minutes.


In another skillet at medium heat add the tomato sauce, paprika, chili powder, cumin, black pepper, salt and the beef broth. Stir for 5 minutes and add the cornstarch mix to thicken the sauce just a little, cook for few minutes.

In a iron cast or skillet warm the tortillas one by one, add spoon of cooking oil so tortilla can be pliable for rolling.


Start assembling the tortillas:

Place the tortillas after preheating in a skillet into the sauce already cooked one side then place it on the baking dish. Add a spoon of ground beef to the tortilla and roll and place seam side down in baking dish. continue the steps with the rest of the tortillas and pour the remaining sauce left on the top of the enchiladas. Pre heat the oven at 375 degree, top the enchiladas with the cheese before placing inside the ove. cook until cheese is melted. Serve the enchiladas in a plate and garnish with green salsa or cilantro. Side dish mexican rice salad or beans.
