Authentic Mexican zucchini with pork- calabacita con puerco

Summer time cooking! fresh zucchini with corn and pork delicious dish perfect for 4 and ready about 40 minutes. You can serve with home cooking tortillas and avocado on the site.


Ingredients:

1 lb short ribs pork (cut in small pieces)

3 medium zucchinis diced

1 sweet corn kernel

1/2 poblano chile diced

1/2 yellow onion diced

1 roman tomato diced

1/4 cup cilantro (optional )

2 garlic cloves minced

1/2 tsp cumin

1 tsp salt

1/2 tsp black pepper

2 tsp vegetable oil

2 cups of water

Summer, it is the time of the year when many of us enjoy cooking garden fresh vegetables and start grilling or cooking special dishes for all to enjoy.



In a large skillet add the ribs and 2 cups of water at high heat and let cook for 15 minutes, remove the excess of liquid from the pan and transfer to a cup. Add the oil to the ribs to cook until lightly browned about 3 minutes medium heat. Add the garlic, onions, poblano pepper,sweet corn kernels, tomatoes, black pepper, cumin, salt and saute for 2 minutes and last add the water to finish cooking covered with lid for 20 minutes or until zucchini is tender.
