Queso Fundido con Chorizo

Queso Fundido or Flameado is one of the number one appetizers that you look forward when visiting Mexican restaurant in Mexico. Prepared in a cast iron the cheese bubbling, steaming the melted cheese, waiting to scooped up onto a flour tortilla taco.
Queso fundido is usually made with queso Asadero, Manchego, chihuahua or Oaxaca. Not all the cheeses can be found here in US, but Oaxaca cheese. Many people use Mozzarella cheese when can't find Oaxaca cheese.
My recipe is created with Oaxaca cheese, Mexican chorizo, roasted garlic,onions, poblano pepper and Anaheim pepper.

Ingredients:
12 Oz Oaxaca cheese
I cup Mexican Chorizo
1 roasted poblano pepper
1 roasted Anaheim pepper
3 roasted chopped garlic
2 roasted slices of onion
3 tsp of cooking oil
4-6 flour tortillas
garnish with cilantro, salsa or cherry tomatillos
Instructions:
Place a cast iron or skillet on cooktop at medium high heat, add the cooking oil and chorizo. Break the chorizo and cook it until done, about 8 minutes.
In a cast iron comal or skillet at medium high heat place the peppers, onions and garlic to be roasted or blackened. The peppers place into a plastic bag to steam for few minutes and then rub off the skin. I remove half of the chorizo
and also excess of fat from cast iron and then I place the shredded cheese on top of the chorizo left on the cast iron, add the roasted minced garlic, and place it in the oven at 350 degree for several minutes or until is melted.
I remove the Queso fundido from the oven and add more chorizo on top, chopped onions, peppers and other additional garnish.
Serve with hot salsa, warm flour tortillas and chips.
