Chocolate - Caramel Cookies

This cookies recipe is made with chocolate and caramel, what a great combination for homemade cookies for holidays or any day of the year! There is nothing better than a glass of milk and set of cookies before bed time.
Bakery style chocolate -Caramel Cookies filled in the center with caramel and drizzle the top with chocolate.
The smell of freshly baked cookies just fills your home with the aroma making everyone mouth watering, after taking them out of the oven. This cookies are soft, chewy and delicious. The recipe is simple and video will help to create the recipe.

Ingredients:
1/2 cup butter or margarine
1/2 cup sugar
2 Oz. semi sweet chocolate melted
1 egg yolk
2 teaspoon vainilla
1 1/2 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
3 Oz. caramel melted
1/4 ginger
1 cup fine chopped pecan
1 cup semi sweet chocolate melted (to drizzle the cookies)
Instructions:
In a bowl, beat butter with electrical mixer, until creamy, gradually add the sugar, 2 Oz. melted chocolate , egg yolk, vainilla, baking soda, salt and flour beating well all the ingredients. Place the bowl covered inside the fridge for an hour.
Pre heat the oven at 325 F.
Remove the dough from fridge and make little balls shape. In a flat surface place the chopped pecans and roll in the balls.
Place the balls 1 inch apart on a parchment baking sheet, press with your fingers the center of each ball, leaving an indention.
Bake at 325 F for 10-12 minutes or until set.
To melt the chocolate and caramel:
in a pot over medium heat, double boiler over simmering water, stirring constantly until melts and mixture is smooth.
Remove them from the oven and place them on a cooling rack, apply the melted caramel with a spoon into the center of each cookie.
Now drizzle the cookies top with chocolate.
