Key Lime Cheese Cake

4th of July Key lime Cheese Cake recipe. Summer time unable to be around people because of the pandemic I decided to cook and bake. This recipe is simple and delicious.

This cheese cake is creamy, sweet and citrusy. It takes a bit of planning as it needs to cool and then chilled before eaten.






Ingredients:

3 pkg. Philadelphia cheese

1 cup of sugar

3 eggs

1/2 cup sour cream

2 tablespoon lemon zest

1 tablespoon lime juice

1 tablespoon cornstarch

1 teaspoon vanilla


2 pre-made baking crust (from the store)

1/2 cup blue berries

2 cups icing


Instructions: Mix into the bowl of stand mixer and mix on low the cream cheese, and sugar for 2-3 minutes, then add the eggs, vanilla, lemon zest, lime juice and cornstarch. Scraping down sides and continue to whip until batter is thickened.


Preheat the oven to 350 F.

Pour the Key Lime filling into baked crust. Now place them into the oven for 60 minutes or until done.


Important: The pies needs to be paced on a baking sheet with water to avoid cracking.

Remove it from oven to cooling rack and cool for 30 minutes. Place in the fridge for at least 3 hours.
