Pistachio Flan

Flan dessert is a very popular in Mexico, Spain and Latin America. This creamy, delicious recipe is topped with caramel custard and roasted pistachios.

I must admit this is one of my favorites dessert that i have enjoyed since I was a little girl. The richest, smoothest and creamiest flan easy to make.

The ingredients:

Caramel:

1/2 cup granulated sugar

3 sp water

1 cup of chopped roasted pistachios

How to make the caramel

on a cook stove pour the sugar into a skillet over medium heat, add the water stirring to combine until sugar is dissolved into a golden-brown caramel.

Pour the layer of chopped pistachios at bottom of the pan first, then swirling to coat the caramel evenly and quickly because caramel will harden in seconds.


For the Custard

5 large eggs

5 egg yolks

pinch of salt

1 can of condensed milk

2 cups of whole milk

1 sp vainilla

1/2 cup sugar


While caramel is cooling start working on the custard.

In a small saucepan, heat 2 cups of milk with 1/2 cup sugar until starts to steam, ( do not let it boil)

In a medium bowl add the eggs and eggs yolks, whisking together with pinch of salt and condensing milk. Add the hot milk mixture slowly, while whisking (this is called tempering, to prevent the eggs from curdling) keep whisking as you add the remaining hot milk, strain through into a large bowl to remove any cooked bits of egg. and add the vainilla.

Pour the custard into the cake pan.

Preheat the oven at 325 degrees and place inside a baking dish with hot water halfway up the sides of the pan. Place the pan with custard into the oven to be baked for 50 minutes or until custard is set.


Carefully remove the flan pan from the water bath pan, you can use tongs to remove the pan and let it cool for 30 minutes before you place it in the refrigerator and chill overnight preferrable.


When ready to serve, gently slide a knife along the edges of the pan to loosen the flan custard. Place a plate over the pan and carefully flip over the pan so the flan is upside down. You may need to tap the flan pan if does not come loose.
