Three Leches Cake! - Pastel de tres leches

Three leches cake is a traditional Latin culture recipe! You must try this dessert, its very delicious, creamy and moist. The combination of three leches (milk) condensed milk, evaporated milk and heavy cream, soaked into the cake making very moist.


This dessert it's perfectly sweet and satisfying for any occasion or celebration. It is easy to make, it does take time but is well worth it.



Ingredients:


For the Cake

2 1/2 cups of all purpose flour

1 tablespoon baking powder

5 eggs (separate yolks/white )

1 1/2 sugar

1 tablespoon vanilla

1/2 cup of regular milk

1 teaspoon cinnamon


For the liquid cream:

1 can 14 oz. condensed milk

12 oz. evaporated milk

3/4 cup of heavy cream

lime zest

1 table spoon lime juice

3 egg yolks

2 tablespoons bailey's Trish cream


For the icy topping:


3 egg whites

1/2 cup sugar

1 cup pineapple chopped

1 cream cheese

1 tablespoon lime juice



Pre-heat the oven to 350 F, grease (2) 11- inch round cake pan


Sift the flour and baking powder whisking several minutes, place the bowl a side.



Use electrical mixer stand In a mix bowl, add the egg yolks, sugar and vanilla until fluffy then add to the flour mixture.

Whisk the egg whites until they form stiff peaks and add to the flour mixture. Add milk as need it and pour the mixture into the baking dish.

Place the baking dish in the oven for 35-40 minutes or until baked. Use a toothpick inserter into the center of the cake to make sure comes out clean.








Meanwhile, prepare the liquid cream for the cake. Place the 3 milks in the food processor or mixer until combine all ingredients.




Remove the baking dishes from the oven and let them cool on a rack about 20 minutes.





Once the cakes cools pierce the cakes many times all over with a fork. Pour the mix liquid cream to soak into the cakes, add sufficient liquid so the cake is soak really well.


After piercing the cake, add the liquid milk mixture


Add the pineapple on top of the cake (1st layer) Then add the cream merengue.

Place the 2nd layer cake on top of the already prepared layer. Use the fork to pierce the cake and pour the cream liquid to soak. Place the cake in the refrigerator overnight.



Now cover the whole cake with merengue cream.
