Beef Albondigas - Albondigas de Carne! (English/Spanish recipe)

Really easy and healthy recipe! Makes 4-5 servings and can be serve over lunch or dinner. I love to cook ground beef, there are so many recipes that we can make using ground beef. My mother taught me to cook the soup with rice in it. You may want to cook the rice separately. This recipe taste delicious hearty soup that can be prepared in no time, you can save leftovers for next day.

Ingredients:
1 pound ground beef
1 large potato diced
4 garlic cloves
1/2 cup carrots sliced thin
2 oz. tomato soup
1/3 onion
1/2 teaspoon cumin
1/2 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon bouillon chicken flavor
1/2 cup rice
chopped cilantro
1/2 cup bell pepper green
1 jalapeno
4 cups broth or water
Meatballs:
1 egg
1/2 teaspoon salt
1/2 teaspoon vinagre
1/2 teaspoon flour
add all the ingredients to ground beef and make the balls.
Instructions:
In a large cooking pot over medium high heat, add cooking oil and place the meatballs to be brown, it will take about 8-10 to cook them evenly.
Add the onions, garlic and sauté for few minutes until the onions are caramelized. Continue adding the rest of the ingredients; tomato sauce, salt, black pepper, cumin, bouillon, potatoes, carrots, cilantro, jalapeno, rice and last the broth or water.
Simmer for about 10 minutes and then lower the heat. Place a lid over and taste the broth for seasoning. Cook the soup for another 10 minutes or until the vegetables are soft.
Serve on a bowl with fresh chopped cilantro, squeeze of lime juice and fresh homemade flour tortillas.

ALBONDIGAS DE CARNE-RECETA EN ESPANOL
1 libra de carne molida
1 papa grande cortada en cuadros
4 ajos cortados finos
1/2 taza de zanahoria cortada delgada
2 oz de salsa de tomate
1/3 de cebolla
1/2 tsp cumin
1/2 tsp pimienta
1/2 tsp sal
1 tsp de consommé Knorr de pollo
1/2 taza de arroz
cilantro
1 jalapeño
1/2 taza de pimiento verde en cuadritos
4 tazas de caldo de pollo o agua
Para las bolas de carne:
1 huevo
1/2 tsp vinagre
1/2 tsp harina
1/2 tsp sal
mezclar los ingredientes bien y formar las bolas de carne para ponerlas a freír.
Instrucciones:
En una olla grande poner aceite de cocinar a fuego medio alto, agregar las bolas de carne molida para freír de 8-10 minutos.
Agregar la cebolla y el ajo para que se doren, después siga con los demás ingredientes meneando constantemente. Por último agrega el caldo de pollo o agua, cubrir la olla y reducir el fuego más bajo. cocinar por 15-20 minutos o hasta que los vegetales estén suaves.
Servir en un platillo hondo, agregar cilantro fresco, jugo de limón y lo puede acompañar con tortillas de harina hechas en casa.
