Authentic Mexican Stuffed Bell Pepper.

Authentic roasted stuffed bell peppers recipe with a tasty and smoky flavor. This recipe is not only authentic but delicious and healthy. The sweet flavor and smoky after roasting on the "comal" or grill makes my favorite dinner.
Red, Yellow, and orange bell peppers have a sweet, milder flavor. Pick bell peppers that are firm and smooth with no soft spots. The stuff is made with ground beef, spices, garlic, onions, vegetables, crema Mexicana and cheese.

Ingredients:
1Lb ground beef
4 rainbow bell peppers
1 cup mix frozen vegetables
1/2 cup chopped red onions
5 minced fresh garlic
1 teaspoon cumin
1 teaspoon ground pepper
1 teaspoon coriander
1 spoon smoky paprika
1 teaspoon salt
1/2 cup chicken broth
1 cup Mexican mix cheese
1/2 cup cooked and drained black beans
fresh cilantro
1 serrano pepper

Instructions:
1- in a large pan over medium high
cook the ground beef until brown.

2- Add the garlic, onions, cumin, ground
pepper, salt, coriander, paprika, vegetables, beans and
broth. Bring to a boil and add the Mexican cream, reduce heat and simmer for 15 minutes.

3- Cut the bell peppers and remove the seeds.

4- Roast the bell peppers on a "comal" or grill to smoke and semi-cook them.

5- Stuff the peppers with ground beef and top with Mexican cheese before placing it in the oven.

6- Bake in a pre-heated 350 F oven until the cheese has melted.

7- Serve the stuffed bell peppers in a bed of sauce and garnish with fresh cilantro.
