Best Fideo con Pollo soup

This homemade comfort soup is one of my favorites dishes. Mexican Fideo (noodle soup) is bold in flavor, hearty and perfect with chicken.


Hispanic families grew up with "fideo con pollo" soup as a daily typical lunch menu. My mother used to cook the soup with beef chuck, chicken, costillas de puerco and ground beef, we enjoyed every dish very much.


Sopa de Fideo is versatile in the sense that you can add more ingredients such as potatoes, bell pepper, carrots and any kind of vegetables.


I always serve the soup with corn or flour tortillas, frijoles de olla, and queso fresco, adding some fresh cilantro and squeeze of lime juice to elevates the flavors.


To prepare the soup Ingredients:


1 lbs. chicken ( drumsticks or wings )

1 package of vermicelli (7 Oz)

1/2 onion

4 garlic cloves

2 serrano peppers

1 teaspoon cumin

1 cup mix vegetables

1 teaspoon ground pepper

1 teaspoon salt

1 teaspoon paprika

1 teaspoon coriander

1 lime

1 8 Oz. V-8 tomato juice

3 cups chicken stock

1 tablespoon bouillon

fresh cilantro





Instructions:

1- Season the chicken. You can use as little as 2 drumsticks, or wings if you want. This recipe is calls for 6 drumsticks, because I like to have leftovers for next day.

Season the chicken with: squeeze of 1/2 of lime juice, ground pepper, cumin, salt and paprika.


2- I then start by cook the seasoned chicken in a little bit of extra virgin olive oil until skin is golden brown and crispy, about 10-12 minutes on medium high heat.


3- Once the chicken skin is golden brown, remove it and set a side. (is not fully cooked)


4- Then I add the vermicelli dry pasta into the same skillet I cooked the chicken to be toasted. Stir constantly so it does not get burn for about 5-8 minutes at medium low heat.

5- Once Fideo is toasted I blend the garlic cloves, onion, cumin, coriander, salt, V-8 juice and chicken stock. Then I add the mixture and mix vegetables to the toasted fideos.


6- I add to the soup, the chicken, bouillon, serrano peppers and fresh cilantro, stirring and cover with a lid to simmer for about 20 minutes at medium low heat.


7- Serve with homemade tortillas, a squeeze of lime juice, fresh cilantro or queso fresco.

Sorry for late responding, and thank you for visiting my site. V-8 has a distinctive flavor of vegetables compare to the regular tomato sauce. I like to use it in many of my recipes. Try and you will taste the difference. Letty
