Cheese Enchiladas- Enchiladas de queso fresco

Cheese enchiladas are made of "queso fresco" this is the only ingredient for the filling and red tortillas you can buy them at the grocery store. This is a very simple recipe and very delicious, it can be made in 30 minutes.


The red corn tortillas does not need to be dip in sauce, the only thing you would need to do, is fry them to make them soft. if desired, use salsa verde its optional.


Queso fresco can be found at any grocery store, you'll love its mild, salty velvety taste.





Ingredients:

8-10 red corn tortillas

1 queso fresco

1/4 cup cooking oil

chopped cilantro


In a large skillet heat the cooking oil over medium high heat. Dip the tortilla on hot oil for few seconds, flip the tortilla so both sides gets soak in hot oil, just to make the tortilla soft and flexible to be rolled.


Remove the tortilla from the skillet and place it on a plate. Use a paper towel to remove excess oil from the tortilla and fill it with queso fresco, roll up and continue the process with the rest of the tortillas.


Chop onion and cilantro is our favorite toppings, but you can serve with shredded lettuce, sour cream or guacamole.
