Chicken Milanesa- Milanesa de Pollo

This recipe is easy to make and it only takes about 25 minutes. Chicken milanesa, refers to a thin cut of meat. Milanesa can be make with beef, chicken and pork. I prefer chicken, more tender and healthy. I bought chicken tenders and used the tenderizer to make the meat thin.

My mother used to cook milanesa every other day for lunch or dinner. She only made beef milanesa and we all enjoy this meal very much.


Milanesa is considered the main dish in our Latin culture, it can be serve with rice, beans, salad, guacamole, mash potatoes etc.



Ingredients:

1 pound chicken tenderloins

1 cup of cooking oils

1/2 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon cumin

1/2 teaspoon achiote powder

1/2 teaspoon salt

1cup of flour

1 teaspoon adobo seasoning + 1 teaspoon paprika to mix with flour

2 eggs


Instructions:


First tenderize the chicken tenderloins with the tenderizer to thin the meat.

In a bowl, whisk the 2 eggs.

In small bowl mix all the ingredients: paprika, black pepper, salt, cumin, achiote and apply to the tenderized chicken on both sides.


In a large bowl, add the flour, paprika and adobo seasoning.

Then dip the tenderized chicken into the egg mixture, using tongs, place the chicken into the flour mixture, turn to coat both sides. Repeat this step for all your chicken milanesas.


Once you finish breading all the chicken milanesas you will proceed to fry them.

In a large fry pan over medium high heat place the chicken milanesas to be fry. Cook each side for 2-3 minutes. Place the milanesa in a plate over paper towel to absorb the oil excess.
