Chicken Tostadas

Tostadas are corn crisped tortilla, loaded with toppings. The tostadas are easy to make, healthy and you can choose as many topping as you like!
The combinations of toppings are endlessly, the most common; meat, chicken, shrimp, beans, lettuce, tomatoes, salsa, queso fresco and don't forget.... the crema topping.

ingredients:
3 -5 corn tostadas (fresh made or from the store)
1 cup chicken ( cooked and shopped)
1 can pinto beans (refried)
1 cup shredded romaine lettuce
red onion rings
1/2 can tender cactus
fresh cilantro chopped
3 ounces queso fresco (crumbled )
1/2 cup Mexican crema

Spices to cook the chicken:
1 teaspoon smoked paprika
1/2 teaspoon ground pepper
1/2 teaspoon salt
1/2 teaspoon coriander
1 tablespoon cooking oil
Spices to cook the cactus:
1/2 teaspoon smoke paprika
pinch of salt
pinch of ground pepper
1 tablespoon cooking oil
Instructions:
In a saucepan add 3 cups water and chicken over medium high heat. Simmer for 15 minutes. remove it from heat and chopped the chicken.

Heat oil in medium saucepan over medium heat until shimmering. Add the smoke paprika, salt, coriander and ground pepper, cook for 2-3 minutes.
Heat oil in medium saucepan over medium heat. Add the pinto beans, smash and refried them for few minutes.

Heat oil in medium skillet over medium high heat, Add the tender cactus, ground pepper, salt, coriander and lime juice. Simmer for few minutes.
Assemble the tostadas:
Working with one tostada at a time, spread out the refried beans first. Add the chicken, shredded lettuce, cactus, red onions, cilantro, queso fresco and crema.
