Chicken with Green Sauce and Cream Cheese Casserole

This chicken casserole its delicious, made with green tomatillo and cream cheese sauce.

The rich hearty, creamy sauce has a smoky, mild heat made an excellent combination of flavors.


The chicken was first season with dry ingredients; paprika, achiote, black pepper, oregano, salt and squeeze of lime juice. Then into the skillet browned the chicken for several minutes and then let them finish cooking in the oven.


Ingredients:

1 1/2 pound chicken tenders

1 Philadelphia cream cheese

1 cup fresh green sauce (tomatillo ) or you can use a can from the store

1/2 chopped poblano

chopped fresh cilantro





Chicken rub ingredients:

1 teaspoon dry oregano

1 teaspoon achiote powder

1 teaspoon paprika

1 teaspoon black pepper

1/2 teaspoon salt

3 tablespoons lime juice


Instructions:

Mix all the dry ingredients in a bowl and apply to the chicken making sure all the pieces are covered with the rub.


Prepare the green sauce:

In a blender, mix the cream cheese and tomatillo sauce until a sauce is made.


In a large skillet over medium high heat apply the cooking oil and place the chicken tenders to fry. Flipping several times the chicken until golden brown. Transfer the chicken into a baking dish, apply the sauce and bake at 375 F. for 15-25 minutes


Serve with rice, mash potatoes or salad.
