Chilaquiles with Salsa Verde

One of the traditional Mexican breakfast is the Chilaquiles. Made with fry corn tortillas, sauce and fry eggs. The sauce can be roja or verde. You can also make the chilaquiles without the fry eggs.
We start with frying the corn tortillas until light brown. The salsa verde can be make with anticipation. The recipe for salsa verde is listed here
The corn tortillas are simmered in the sauce and served with fry eggs on top. I finally garnish with queso fresco, chopped fresh cilantro and slices of fresh avocado.

Ingredients:
6 corn tortillas cut any shape
1 cup salsa verde
2 eggs
3/4 cup cooking oil
1/2 cup Oaxaca cheese or mozzarella

garnish:
purple onion slices
fresh chopped cilantro
avocado slices
Instructions:
In a large skillet add cooking oil over medium high heat and fry the corn tortillas.
stirring constantly to avoid burning and to cook evenly until light brown and crisp.
Remove the tortillas and place them on a plate with paper towel to remove any oil excess.
Meanwhile remove the cooking oil from the skillet, and add the salsa verde. Cook the salsa stirring well for 3-4 minutes. Add the fried tortillas back stirring making sure are covered with salsa. Add the shredded cheese and let it melt for 2 minutes.
Remove the chilaquiles from the heat and place them in a plate. Immediately fry the eggs and place them on top of the chilaquiles.
Garnish with fresh chopped cilantro, queso fresco, purple onion, avocado and more salsa verde.
