Mexican Picadillo -Potatoes and Chipotle.

This recipe consist of ground beef with a combination of mini-potatoes, carrots, tomato, onions, garlic, chipotle pepper, and spices.


I make the sauce with fresh tomatoes, onions, garlic, cilantro, ground pepper, coriander, dry oregano, cumin, salt, tomato sauce and chipotle peppers.


The fresh tomatoes had a vibrant flavor but consistency of the sauce was watery. By adding cornstarch mixed with water I achieved a nice thick gravy sauce.


It's a Mexican comfort food, authentic recipe using fresh vegetables and other ingredients to enhance unique rustic texture and flavor.



Making Picadillo with potatoes is an easy recipe, less expensive and delicious.


Ingredients:


1 1/2 pound of ground beef

2 cups of mini- potatoes (red, purple yellow) cut in 1/4

1 roma tomato

4 oz tomato sauce

1 tablespoon chipotle pepper (canned)

4 garlic cloves

1/2 yellow onion

1 diced carrot

1/2 teaspoon cumin

1/2 teaspoon ground black pepper

1 teaspoon coriander

1 teaspoon salt

1 serrano pepper

cornstarch

2 cups of water




Instructions:


Use a blender or food processor to make the sauce. blend the chipotle pepper, tomato, onions, garlic, cumin, coriander, ground pepper, salt, tomato sauce and dry oregano.


Cut the mini-potatoes and carrots.


Heat oil n a large skillet over medium high heat. Add the ground beef and cook for 10 minutes. Drain the liquid before adding the ingredients and vegetables.





Add the sauce mixture stir to mix well with ground beef. Add mini-potatoes, and carrots stir frequently until all ingredients are well mixed. Add about 2 cups of water and cover with a lid and let cook for about 20-25 minutes or until potatoes are soft and tender.


Mix cornstarch with 3 tablespoons of water to thicken the picadillo let it cook for 3 minutes and turn heat off.


Serve with white rice, refried beans and fresh tortillas.

Ingredients:


1 1/2 lb de carne molida

2 tazas de papas cortadas en cubitos

1 zanahoria cortada

4 oz de pasta de tomate

1 tomate

4 dientes de ajo

1/2 de una cebolla cortada en 4 partes

1 cucharada the chipotle enlatado

1/2 cucharada de comino

1/2 cucharada de pimienta

1 cucharada de sal

1 cucharada cilantro en polvo

1 cucharada de oregano seco

1 manojo de cilantro fresco

maicena con agua para espesar el guiso

2 tazas de agua


Preparación:


En la licuadora o procesadora prepare la salsa con los ingredientes: chipotle, tomate, cebolla, ajo, pure de tomate, pimienta, comino. cilantro molido, oregano, sal y agua.


En un sarten grande a fuego medio alto ponga la carne molida a cocinar for 10 minutos. Sacar el líquido o exceso de grasa que suelta la carne y agregar la salsa. Después a agregar los ingredientes: las papas y zanahoria.


Combine los ingredientes meneando continuamente para que los condimentos se cocinen bien con la carne. Agregar el agua y tapar el sartén para que se cocine a fuego lento for 20-25 minutos o hasta que las papas estén suaves.

Agregar la maicena para que se espese el picadillo cocínelo por 3 minutos y apague el fuego.


Puede servir el picadillo con arroz blanco o frijoles refritos y tortillas.
