Corn on the Cob - Elote Rostizado

This Mexican street corn on the cob is made on the grill, it is so easy and flavorful.

Every weekend when I barbecue in my back yard, I roasted corn on the cob. My family loves it.


The corn is smothered with lime juice, creamy spread mixture and sprinkled with Mexican cheese cotija. This is the best recipe for corn on the cob.






Ingredients:

2 -4 fresh corn husked

1/4 cup mayonnaise

2 lime juice

1/4 tsp chili powder

1/4 tsp Chayanne powder

1/4 cup cotija cheese (or parmesan)


You may want to buy the chili package already prepared (at Latin groceries stores)




Instructions:


Place the corn directly over medium high heat. Turn often to cook evenly until the kernels are spotted brown. Remove the corn cob from the grill and transfer to a large plater or container.


In a cutting board holding the ear tip, start slicing off the kernels with a sharp knife, working around the cob in sections.

Place the ingredients in a mixing bowl, add the kernels and taste for seasoning.


Sprinkle the cheese and serve.
