Easy Beef Steak Tacos!

When I have a busy day, I try to prepare something easy for dinner, and this recipe is a great idea to keep the family happy!


The combination of beef steak, poblano pepper, onion and pineapple is perfectly complemented on a warm homemade corn taco!


In this northern Mexican taco filling, rich and smoky and very simple to put together.

A deeply flavorful marinated based gave our steak a flavor boost. I have combined red wine vinegar, teriyaki marinade, dry oregano, black pepper, lime juice, salt and steak seasoning.


Ingredients:


11/2 flank steak cut very fine

8 corn fresh tortillas ( as many you need)

1/3 small yellow onion sliced

1 poblano strips

2 green onions chopped




Marinate ingredients:

1 teaspoon red wine vinegar

1 tablespoon teriyaki marinade

1 tablespoon lime juice

1 teaspoon black pepper

1 teaspoon salt

1 teaspoon dry oregano

1 teaspoon steak seasoning


Coleslaw topping:

1 cup purple cabbage sliced and chopped

1/2 cup chopped pickles

1 tablespoon white vinegar

2 tablespoon olive oil

2 tablespoon lime juice

salt

pineapple chopped for garnish

fresh cilantro chopped for garnish

avocado slices


Add the red wine vinegar, teriyaki marinade, lime juice, black pepper, dry oregano, salt and steak seasoning to the steak meat. Combine all ingredients and rest the meat for 20 minutes.


Place the meat in a large skillet over medium high heat, add cooking oil and cook the steak meat, turning as needed 5-8 minutes. Add the onions and poblano pepper stirring occasionally until soft.


Blend all the ingredients for the coleslaw salad and place it aside while you warm the corn tortillas.


To assemble the tacos:

Place the meat over warm tortillas, top with generous amount of coleslaw salad, add springs fresh cilantro, chopped pineapple, diced avocado and squeeze of lime.
