Easy Chicken Mole

How to make easy mole? It's really easy! No labor intense required. This recipe is made using Mole Dona Maria jar, it is adjust for our family taste.


To make home made mole it will take a lot of ingredients and almost a whole day to prepare. The most popular mole is "mole poblano" is rich, deep read sauce made from chiles, nuts, spices, fruits and chocolate.


You still enjoy the delicious traditional mole using a paste with other ingredients, making this dish so flavorful and rich.





The Dona Maria mole jar is a paste/sauce that you can find at any grocery store, you can mix with chicken broth, garlic, onions, dry oregano and peanut butter to reduce the heat. It taste so delicious, you should try it.


I made the recipe with chicken thighs, first I boil the chicken thighs for 10-12 minutes and use the broth to make the sauce.


Then I blend the paste/sauce with onions, garlic, oregano, peanut butter and chicken broth.


Cook the chichen with the sauce and serve with Mexican rice.


Ingredients:


1 box Dona Maria Mole paste

4 chicken thighs

1/4 small onion

3 garlic cloves

1 teaspoon dry oregano

2 tablespoons peanut butter

1/2 cup chicken broth




Instructions:


In a saucepan boil the chicken over medium high heat for 12- 14 minutes.

Using a blander, blend the onions, garlic, dry oregano, mole paste/sauce and chicken broth.


Heat 1 tablespoon of cooking oil in a non-stick skillet over medium high heat, cook the chicken until golden brown on both sides, about 5 minutes. Add the mole sauce to the chicken and simmer for 10 minutes.


Place Mexican rice on a plate and transfer the chicken pouring the mole sauce over and garnish with sesame seeds and cilantro.
