Mexican Cheesy Taco Shells Soup

This shells soup features ground beef seasoned with taco season, garlic, onions, tomatoes, serrano, cilantro and spices. Garnished with blended cheeses and black olives, making the dish more satisfying and delicious.





Ingredients:

11/2 cup shells pasta

1 pound ground beef

1 pkg. taco seasoning

2 garlic cloves chopped fine

1/4 yellow onion chopped

1 serrano pepper chopped

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp cumin

fresh chopped cilantro

2 tablespoons capers

2 oz. tomato sauce

1/4 cup chicken broth

1 tablespoon green onion chopped fine


Instructions:


In a pot of boiling salted water, cook the shells until tender, about 25-30 minutes.

In a large deep skillet over medium high heat add the ground beef until browned.






Add the garlic and onions, stir while adding the rest of the ingredients; taco mixture, cumin, black pepper, salt, tomatoes, tomato sauce, serrano and capers. mix all ingredients well and let them simmer for 5 minutes.


Add the cooked shells to the ground beef mixture stirring to get the ground beef and the ingredients mix. Then add the blended cheese and black olives.







Serve and garnish with fresh cilantro and cotija cheese.
