Mexican Lentil Soup

Lentil soup with sausage and potatoes makes a hearty and delicious soup for lunch or dinner. Lentils is a very nutritious, economic and easy meal to prepare. I like to make lentils with sausage you can use bacon or other meat.
There are several variations for vegetables that you may want to try, after making my recipe. you may want to try with carrots, green beans, zucchini or corn.
I like my recipe a little bit spicy and I like to use corn starch to thicken just a little bit the soup. it is delicious!!!


Pre-slice all the vegetables and sausage

Cook the lentils for 15 minutes before adding the vegetables and other ingredients

Ingredients:
1 cup of lentils
2 medium red potatoes
14 Oz. fully cooked polka kielbasa sliced round
1/2 poblano chopped pepper
1/2 onion
4 garlic cloves, minced
1 teaspoon cumin
1 teaspoon ground pepper
1 teaspoon salt
1 teaspoon coriander
1 table spoon bouillon
1 teaspoon smoke paprika
1 serrano pepper
fresh cilantro
lemon wedges
4 cups of water
1 table spoon corn starch
Instructions:
1- Sort the lentils in a flat surface, pick through the lentils and remove any tiny rocks if any, rinse and drain.
2- Place the lentils in a pot with water and cook over medium high heat for 15 minutes.
3- While lentils are cooking, dice all the vegetable and ingredients.
4- Add to the lentils the diced potatoes, sausage, onion, garlic and all the spices.
5- Cook all the ingredients while stirring frequently for about 15 minutes or until lentils have reached the desired tenderness.
6- Mix the corn starch with water and add to the lentils to thicken the soup, cook for 2 minutes and serve with corn tortillas or bread.
7- Garnish with lime juice and fresh cilantro.
