Mexican Pizza

One thing kids love, its pizza night! of course adults too! Pizza is so fun to make and we can made any combination; meat lovers or vegetarian.

Making pizza dough is what takes the longest because we need to rest the dough for an hour. Baking takes between 15 -18 minutes.


This recipe does not have tomato sauce, it is perfect with out it. My kids love it and for healthy reasons I like to make it without the sauce. You can add the tomato sauce its optional.


Yeast mixture ingredients:


1 1/2 teaspoon active dry yeast

1/8 teaspoon ground ginger

1/4 cup warm water

Mix ingredients for 5 minutes


Dough Ingredients:


1 3/4 cups all purpose flour

1/2 teaspoon sugar

1/1/2 teaspoon salt

1/4 cup olive oil

1 cup warm water

yeast mixture

Mix ingredients and knead the dough until smooth and elastic and then form a ball.




Toppings: (you can add as many toppings or change toppings)

4 oz. shredded mozzarella cheese

pepperoni

jam cut in cubes

Italian sausage or Mexican chorizo

red onions chopped

roasted poblano peppers chopped

roasted red bell pepper chopped

mushrooms sliced

Oaxacan cheese

fresh mozzarella balls

jalapeno slices

olive oil

dry oregano


1- Dissolve the yeast with ginger and warm water; set aside for 5 minutes.


2- In a bowl combine the flour, sugar, salt, olive oil mixing with spoon. Then add the yeast mixture and water. Stir until blended (if using a food processor) otherwise use your hands.


3- Knead the dough for 10 minutes, make a ball and cover with damp towel or plastic and let it rise for 1 hour.

4- In a skillet cook the sausage and roast the peppers (optional). Cut all the ingredients while the dough is resting.


5- I like to use parchment paper and placed on flat surface to stretch the dough with my hands. You can roll the dough making a shape about 14 inch round.


6- I don't use tomato sauce for this recipe, you may want to add it.


7- Place the pizza on the baking sheet .


8- Top with your favorite toppings (or use ingredients on this recipe) Preheat oven at 500 degree, bake for 15-18 minutes or until crust is golden.
