Mexican Spaghetti

Brings south of the border combining many species and loaded with lots of flavor. I just love an easy recipe like this one to bring the whole family together at the table for a good conversation. It taste amazing, it has the spicy fiery heat and flavor of Mexican food and the rich Italian style comfort food.


Ingredients:

1/2 of 17 oz. package spaghetti

1 tablespoon salt

6 cup of water

2 tablespoon olive oil


Ingredients to boil the pasta in a pot over medium high for about 20 minutes or until done.


Sauce ingredients:

1 pound ground beef

1/3 cup chopped onions

5 garlic minced

1/2 teaspoon cumin

1/2 teaspoon black pepper

1 teaspoon dry oregano

1 charred roma tomato

1 can 12 oz. whole tomato (chopped or smash)

3 tablespoon chopped cilantro

1/3 cup bell pepper chopped (roasted)

1/3 cup poblano chopped (roasted)

1 tablespoon salt

Basil leaves diced few

Thyme leaves dices few

1 serrano pepper

Queso fresco


Instructions:


In a large skillet, brown the ground beef over medium high heat for about 10-15 minutes. Drain the excess of oil or fat, add the garlic, onions and mix the taco seasoning mixed with.


Add the rest of the ingredients stirring continually, let it cook for about 15-20 minutes.

Remove the spaghetti from the cook top and drain it. Add the pasta to the meet mixture stirring to blend all the ingredients completing cooking for another 10 minutes.


Serve the spaghetti and topped up with fresh chopped cilantro and queso fresco.
