Salsa Verde with eggs, bacon and sweet potato fries

Try this recipe, easy to make for breakfast, brunch, lunch and late dinner.

Salsa Verde, topped with eggs, bacon and on the side sweet potato air fry fries.

If you don't have air fryer you can fry the fries on a griddle.


Serve with fresh flour tortillas and garnish with cotija cheese and cilantro.


Ingredients:


Salsa Verde cooked

2 eggs

bacon strips

sweet potato fries

flour tortillas

cotija cheese to garnish

cilantro to garnish


Instructions:


Make the salsa Verde (recipe in in this site salsa Verde )

In a nonstick skilled, cook the bacon over medium heat, turning until crispy.



If air fry potatoes: cut a potato in French fries cut and place it inside the air fryer to be cooked.




If using skillet: place fries on skillet over medium high heat for 3-4 minutes or until crispy.


You will need to have the salsa ready placed on a plate, the bacon and fries in order to cook or fry the eggs.


The last item to cook will be the eggs.

garnish with cotija cheese the fries and cilantro (optional)
