Grilled Chicken wings recipe incorporates a lot of different chilis, spices, lime juice, vinegar and olive oil to infuse the amazing smoky grilled flavor.
I love the smoky flavor of coals instead of gas grilling. I know it takes longer to get the grilling going but it's worth the extra time.

Its highly recommended to marinade the day before the meat, the intense flavor of all the ingredients penetrating the surface breaking the muscle fiber. The wings turn juicy, spicy and tender with a smoky flavor from the chili combination.
Depending on the size and thickness of the wings and drumettes, they should take about 20-30 minutes to cook. Rotating and flip the wings often to ensure evenly cooking.

Ingredients for marinade:
1/4 cup olive oil
3 teaspoons balsamic vinegar
1 teaspoon achiote powder'
1 teaspoon cayenne powder
1 teaspoon onion powder
1 teaspoon paprika
1teaspoon black pepper
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon coriander
4 tablespoons lime juice
1 teaspoon salt
3 tablespoons Cholula hot sauce

Instructions:
In a bowl combine all the ingredients; cumin, onion powder, paprika, coriander, achiote, chili blended, chili powder, lime juice, balsamic vinegar, salt and Cholula hot sauce. mixture all the ingredients and apply the mixture to the chicken.
Use a zip-lock plastic bag to place the chicken and marinade. Refrigerate overnight.
Set the coals to the lowest level away from the grill surface so chicken don't get burned fast. Placing the chicken wings in the lowest heat of the grill side will allow to slow cook and get a nice caramelized crust. Close the grill lid and rotate frequently the wings using long handles tongues to ensure the meat cooks evenly.
Serve with potato salad, ranch dressing, hot sauce or vegetables.
