Spicy Shrimp and Scallops

I love seafood, this recipe is quick and healthy for lunch or dinner. You can make this spicy or non-spicy, loaded with a lot of veggies and flavor.


You can cook shrimp with almost anything! they are used in wraps, tacos, salad, fried rice, pasta, you name it.


This recipe will take about 20-25 minutes, cut all the veggies you want to add to the dish before cooking. I sauté the fresh garlic and onions first and then add veggies with olive oil until they are caramelized. The seafood cooks very fast that's why I add them last.





Ingredients:


1 pound large shrimp raw peeled and deveined

1 pound fresh scallops

1 cup sweet sherry tomatoes cut in half

1 orange roasted sliced bell pepper

1 small yellow onion sliced

3 garlic minced

1 roasted chopped jalapeno

3 tablespoon capers

1/2 teaspoon salt

1/2 teaspoon ground pepper

1/2 teaspoon paprika

2 tablespoon lime juice

chopped fresh cilantro


Instructions:


In a large skillet over medium high heat, place the garlic and onions to sauté in olive oil.

stir and add the tomatoes, bell peppers, jalapenos, capers, salt, black pepper and paprika. Cook the veggies until they are caramelized. Add the shrimp and scallops stirring for few minutes and add the cilantro. Lower the heat and cover the skillet for 2 minutes.





Serve with white rice and topped with fresh chopped cilantro.
