Tortilla Soup- Sopa de Tortilla

Tortilla soup packs a ton of flavor and texture combining so many ingredients in one dish. From onions, garlic, cumin, oregano, jalapeno, tomato, paprika, chilli, fresh cilantro, lime juice, avocado, queso fresco and chicken.

ingredients:

1 whole chicken

3 tablespoon cooking oil

1 chopped onion

1 chopped roma tomato

3 garlic cloves minced

1 teaspoon cumin

1 teaspoon black pepper

1 teaspoon paprika

1 teaspoon dry oregano

1 chopped jalapeno

4 oz tomato sauce

1 tablespoon salt

1 can whole kernel corn

4 cups chicken stock

1/2 can black beans

1 avocado

1 lime

tortillas strips crispy


Instructions:


In a large pot add the whole chicken with water and boil for 35-40 minutes

Shred the chicken with a fork after is cooked.


Soup:

In a large pot heat the cooking oil over medium high heat. Add the diced onion, garlic, pepper and tomato stirring frequently for 8 minutes. Add tomato sauce, cumin, black pepper, paprika, oregano, salt, and shredded chicken cook over low heat for about 20 minutes.

Then add the corn, beans and cilantro simmer for additional 10 more minutes.

Serve in bowls, top it with tortillas strips, fresh cilantro, queso fresco, lime juice and avocado.
