Potato and Chorizo Burrito!

Mexican burrito breakfast, I want to share this recipe with you, easy to make with potatoes, mexican chorizo, poblano pepper, onions, eggs and oaxaca cheese.
Ingredients:
1 read potato
1/2 cup mexican chorizo
2 sp chopped onions
2 sp chopped poblano pepper
1/2 cup Oaxaca cheese
2 eggs
1/2 cup cooking oil (to fry the potatoes)
1 sp salt
1 burrito tortilla
Toppings
guacamole
chopped onions
chopped tomato
Instructions:
In a large skillet at medium high heat add cooking oil and chopped potatoes cook for 8-12 minutes. In a separate skillet cook the chorizo for few minutes. Remove the excess oil from the potatoes and add the chorizo, poblano, onions and salt and stir until all ingredients are roasted. Add the eggs and Oaxaca cheese and mix all the ingredients.
In a large plate place the burrito warm tortilla and add the cooked mixture, rolling the tortilla and top with guacamole, onions and tomatoes (optional)
