Egg, Bacon and Beans Burrito!

Breakfast burritos are a flavorful, satisfying and easy to make for morning meal!

Burrito's filling can be made with eggs for breakfast of beef for brunch or lunch. Either way burritos are fantastic and quick to make, kids love it.


I like to create many combinations for breakfast; chorizo and eggs, ham and eggs, potatoes and eggs, eggs with bell peppers, poblano, tomato, onions and cheese. You can create many variations adding beans and cheese as well.


Serve the burritos with any hot sauce and cheese toppings.



I like to make homemade flour large tortillas when I prepare the burritos.





Ingredients:

1-3 large flour tortillas

1 cup chopped and cooked bacon

1 cup refried beans

4 eggs

Salsa verde or roja


Instructions:


1- Make the flour tortillas ahead of time or buy from grocery store.

2- Cook the bacon in nonstick skillet over medium-high heat until brown and crispy.

3- Cook the beans in a nonstick skillet with some of the oil from the bacon adding more flavor to the refried beans.


4- Add the eggs to the bacon, use wooden spoon to mix the eggs until done.

5- Wrap tortilla in damp dish towel and microwave until warm and pliable.


6- Lay the tortilla on a plate and spread the refried beans. Mound egg mixture across the center of the tortilla, roll tightly into a burrito.


7- Garnish with hot sauce and queso fresco.
