Eggs and Homemade Tamales!

If you are from La "frontera" of Mexico, you know our mothers would give you for breakfast, toasted (recalentados ) on a cast iron homemade tamales with over easy eggs on top. This is an incredible breakfast, for hangovers over a weekend, Holidays or New Years!

Mother use to say, " instead of tortillas you have the tamales" she was right! very delicious and fulfilling meal.

To toast the tamales in the cast iron or "comal":

add a tablespoon of cooking oil to the cast iron or skillet.

Unwrap husk off of tamal, and place it in the cast iron.

The cast iron or "comal" needs to be over medium high heat. Fry the tamales both sides about 7 minutes or until crispy.

Remove the tamales from cast iron and place on a plate. Then add the fry eggs on top.


Over easy eggs:

In a skillet over medium high heat, fry the eggs and place them on top of the tamales

Topped with hot sauce.


Ingredients:

5-6 homemade tamales

2 eggs

hot salsa

cooking oil



Best treat ever!
