Machacado a la Mexicana (dry beef with eggs)

Machacado with eggs is dry shredded beef combined with salsa picante and eggs.
It makes an easy mexican breakfast in a taco, burrito or just on a plate with beans.
Traditional Mexican dry beef is marinated with spices and let it dry for days just like beef jerky. My grandfather back in the old days used to do this at the ranch and have the beef hanging outside like dry clothing... He used to say "let's get ready for the winter time" meaning he need it have a whole cow ready to feed the family.
Now you can find machacado or dry beef at meat markets or hispanic markets ready to be cooked.

Ingredients:
1 cup of dry beef or machacado
1 roman diced tomato
2 spoon of diced onion
1 serrano pepper diced
3-4 eggs
2 spoons of cooking oil
tortillas (flour or corn)
refried beans
Instructions:
In a medium skillet at medium high heat saute the onions, tomatoes and serrano peppers with 2 spoon of cooking oil. Cook for 3-5 minutes meanwhile get eggs ready to be add to the skillet. Add eggs and stir thoroughly to mix all the ingredients.
Serve with flour tortillas, refried beans and topped up with queso fresco.
