Tacos de Chorizo con Huevo

Start your morning with a good breakfast tacos. Mexican chorizo con huevos is a great meal to prepare.


Homemade tacos are perfect for a busy family.

Traditional Mexican breakfast Tacos are made with flour or corn tortillas and toppings vary from beef to eggs combinations.

I love the chorizo and eggs, the aroma of the smoky and spicy chorizo when is cooking with eggs is a perfect combination.

Ingredients:

Chorizo ( find at any grocery stores)

eggs (as many you want)

1/2 cup of chopped onions (optional)

1 jalapeno (optional)

1/2 chopped roman tomato (optional)

1 sp cooking oil


Instructions:

In a skillet add the cooking oil and remove the chorizo casing to be cooked. Saute the chorizo for 10-15 minutes at medium low heat, use spoon to break up the chorizo into small pieces. When chorizo is cooked through add the onions, pepper, tomato and stir for few minutes. Add the eggs and beaten scramble everything together for 3-4 minutes.

Can be served with tortillas

Toppings: avocado, salsa
